Eclair Dessert

A no-bake dessert made with layers of graham crackers, creamy vanilla pudding filling, and a rich chocolate topping, perfect for a sweet treat.

Ingredients

Topping

semi-sweet chocolate 2 ounces
butter 3 Tbsp
corn syrup 2 Tbsp
vanilla extract 1 tsp
confectioners sugar 1.5 cups
milk 3 Tbsp

Filling

instant vanilla pudding 2 packages
milk 3 cups
whipping cream or Cool Whip 1 cup

Graham crackers 12 pieces

Instructions

Topping Preparation

Melt the semi-sweet chocolate and butter together.

Stir in the corn syrup, vanilla extract, confectioners sugar, and milk.

Mix until smooth and well combined.

Filling Preparation

Mix the instant vanilla pudding with milk according to the package directions.

Fold in the whipped cream or Cool Whip until fully combined.

Assemble the Dessert

Place a layer of 4 whole Graham crackers in the bottom of a rectangular dish.

Spread half of the pudding mixture over the crackers.

Place another layer of Graham crackers on top of the pudding.

Spread the remaining half of the pudding over the crackers, then top with a final layer of Graham crackers.

Pour the chocolate topping evenly over the entire dessert.

Refrigerate for at least 10 hours to allow the flavors to meld and the dessert to set.
